From the very first challenge, Robin Passera set the tone with L’Assemblage, a cocktail praised by the jury for the clarity and precision of its recipe, as well as the remarkable consistency of the execution from start to finish.

Elegant and perfectly balanced, L’Assemblage was elevated by Robin’s signature pairing: a reimagined Lille-style waffle inspired by the croissant, accompanied by blackcurrant and lemon jellies with a touch of verbena. A refined gastronomic complement that echoed the aromatic identity of Epicureans Gin and impressed the jury through both creativity and coherence.

Robin confirmed his mastery during the Mystery Box Challenge. Faced with a new set of ingredients and the pressure of creating on the spot, he once again delivered a beautifully composed cocktail. The jury particularly loved his delicately dosed foam, which created an elegant and subtle introduction before revealing the full expression of the drink.

Across both challenges, Robin stood out for his precision, creativity and control, delivering two accomplished performances that ultimately earned him the title of Winner of the first Epicureans Spirit Professional Bartender Competition.
